Premium Fresh Spotted Sea Snails

Round, heavy sea snails with a smooth, high-spired shell, cream to pale brown and closely patterned with rows of dark brown spots. Inside each shell sits a firm, pale nugget of meat.

The meat is dense and slightly chewy with a clean, sweet, faintly briny flavour. Boil or simmer them briefly, then lift the meat out with a pin or a small fork and dip it in soy, vinegar and chilli, or toss the meat through a hot wok with garlic and basil. They are usually served cool rather than hot.

• Cream and brown shells with dark spot rows
• Firm, slightly chewy, sweet and briny
• Simmer briefly and serve with a dipping sauce

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
