Golden Sea Star Seafood Delicacy

Whole sea stars in a deep golden orange, their arms covered in a fine mesh of raised spines. Some are opened to show the interior, where dense bands of dark olive-green run the length of each arm.

The edible part is that green material inside the arms — rich, faintly briny and unusually savoury. The stars are usually steamed briefly and the contents spooned out, or the arms are cut away and simmered in a broth. Treat them as a garnish or a small delicacy rather than a main.
